Carrot Banana Bread Oatmeal Bars⁠

Hello long weekend! No work today means folding the laundry I did 4 days ago, finally cleaning all the dishes from this week, and snacking on these DELISH breakfast bars. Even if it’s past breakfast time. Super moist, crunchy, and fluffy - all at the same time. The PERFECT breakfast for you to cook up this Easter Sunday.

 

Carrot Banana Bread Oatmeal Bars⁠

🔪 Prep Time: 10 minutes

🍳Cook Time: 20 minutes

🕒Total Time: 30 minutes

🍴Serving Size: Makes 8 Bars


Ingredients:

Wet Ingredients:⁠

  • 1 very ripe Banana⁠

  • 1 Pasture Raised Egg (@vitalfarms) (vegan sub - 1 tbsp ground flax mixed with 2 tbsp water)⁠

  • 1 tbsp Maple Syrup⁠

  • 2 tbsp Creamy Peanut Butter (@traderjoes)⁠ (or any favorite nut butter)

  • 1/2 tbsp Coconut Oil (@vitacoco)⁠

  • 2 tbsp Unsweetened Almond Milk (@bluediamond)⁠

  • 1/2 tsp Vanilla Extract (@traderjoes)⁠

Dry Ingredients:⁠

  • 1/3 cup GF Rolled Oats (@bobsredmill)⁠

  • 1/4 cup Oat Flour (ground-up oats)⁠

  • 1 Carrot, shredded (~1/3 cup)⁠

  • 1/2 tsp Baking Powder⁠

  • 1/4 tsp Baking Soda (@traderjoes)⁠

  • Dash of Cinnamon⁠

  • Smaller dash of All Spice⁠

Optional Add-ins:


Instructions:

  1. Add your wet ingredients to a mixing bowl. Use a whisk or hand mixer to evenly mash and mix into a batter.⁠

  2. Use a food processor to ground up 1/4 of your oats to turn into flour. Then add the flour + 1/3 whole oats to your wet ingredients.⁠

  3. Use already shredded carrots or a mandolin slicer/shredder to shred your carrot. You want the pieces to be roughly 1.5”-2” long. Add to wet ingredients.⁠

  4. Add in your baking powder and baking soda. Mix evenly together using a wooden spoon.⁠

  5. Finally, if desired (I highly recommend lol), add in chocolate chips and nuts!⁠

  6. Add to a bread pan lined with a baking sheet. Spread evenly.⁠

  7. Bake at 350° for 20 mins.

  8. Let it cool before cutting into 8 bars.⁠


Notes & Tips:

  • Highly recommend adding the carrots for a boost of veggies that you can't even taste!

  • The riper the banana, the better. It will make your bars very naturally sweet!

  • Store in an airtight container in the fridge for up to a week.

  • You don't have to enjoy these only for breakfast! Makes for a great healthy dessert as well!
