Apple Cider Sweet Potato Casserole⁠

I am a hardcore lover of sweet potatoes...but somehow, I rarely use them in sweet dishes 😱 Such as in breakfast tacos 🌮 But this sweet potato casserole never disappoints 🙌🏽 Especially with the extra kick of Apple Cider 😉 It also happens to be vegan with some vegan marshmallows from Trader Joe’s 👌🏼 It’s freakin’ perfect & delish 😍⁠

 

Apple Cider Sweet Potato Casserole⁠⁠⁠⁠

🔪 Prep Time: 15 minutes

🍳Cook Time: 40 minutes

🕒Total Time: 1 hour

🍴Serving Size: 6-8


Ingredients:

  • 2 medium Sweet Potatoes, peeled & roughly cut into 1” cubes⁠

  • 1/2 Apple, small cubes⁠

  • 2 tbsp Maple Syrup (@coombsmaple)⁠

  • 1 tbsp Coconut Oil, melted (@vitacoco)⁠

  • 1/2 tsp Vanilla Extract (@traderjoeslist)⁠

  • 1/2 tsp Cinnamon⁠

  • Pinch of Salt⁠

  • Pinch of Nutmeg⁠

  • 2 tbsp Unsweetened Almond Milk (@califiafarms)⁠

  • 2 tbsp Unfiltered Apple Cider (@traderjoes)⁠

  • Handful of Chopped Pecans⁠

  • Handfuls of Vegan Mini Marshmallows (@traderjoes)⁠

Instructions:

  1. Prep your sweet potato & apple. Preheat oven to 375°.⁠

  2. Then add your cubed sweet potato to a pot & fill with water until they’re covered. Cover & bring to a boil. Once boiling, uncover & cook for 15 mins - until fork tender.⁠

  3. Drain & add to a mixing bowl. Use a fork or potato masher to mash it up.⁠

  4. Add in all of the remaining ingredients, besides the marshmallows. Evenly incorporate.⁠

  5. Transfer to a baking dish. Use a spatula to flatten into an even layer.⁠

  6. Then sprinkle in some more chopped pecans as well as marshmallows, completely covering the top. Drizzle on just a little bit of maple syrup on top.⁠

  7. Cover with aluminum foil & bake for 15 mins. Remove the foil & bake for another 10 mins.⁠

Notes & Tips:

  • Keeps best in the fridge for up to 5 days.
