Instant Pot Indian Masala Pasta

Decided to put an Indian twist on pasta sauce! Made the pasta sauce so flavorful and delicious. A must try! Also, this recipe doesn’t require an Instant Pot but I’ve been itching to use mine again LOL so I did. Used Banza’s NEWdles that they just came out with! It’s amazing how different your pasta can taste depending on the shape! Definitely LOVED the one I tried. Use ‘NEWDLES’ on eatbanza.com to get 20% off.

 

Instant Pot Indian Masala Pasta

🔪 Prep Time: 10 minutes

🍳Cook Time: 35 minutes

🕒Total Time: 45 minutes

🍴Serving Size: 4


Ingredients:

  • 1 box Gemelli Pasta (@eatbanza)

  • Ghee {Clarified Butter} (@bulletproof)

  • 1 small Onion

  • 3 cloves Garlic, minced

  • 1/2 tsp Ginger, minced

  • Spices - Smoked Paprika, Cumin, turmeric, dash of Cayenne, Salt & Pepper

  • 1️/2 14.5 oz can Diced Tomatoes

  • 1/2 cup Vegetable Broth

  • 1/4 tsp Garam Masala

  • 2 tbsp Nutritional Yeast (@bobsredmill)

  • Red Crushed Pepper Flakes

  • 1/2 6 oz can Tomato Paste

  • 1/2 tsp Raw Honey

  • Spinach, Arugula, & Herb Mix

Instructions:

  1. Cook your pasta according to package instructions.

  2. Prep your veggies for the sauce. Then set your Instant Pot to ‘Sauté’ mode. Add in 1/2 tsp of ghee and cook your onions, garlic, and ginger until caramelized.

  3. Then add in your spices and sauté for another 1-2 minutes. Hit ‘Cancel’.

  4. Add in the diced tomatoes, broth, garam masala, nutritional yeast and red crushed pepper. Gently stir for about 30 seconds.

  5. Finally, add in dollops of the tomato pasta, ghee, and honey in the center. Do not stir! Carefully close the top and ensure the steam knob is turned to ‘Sealing’.

  6. Hit ‘Pressure Cook’ on High & set the time to 15 minutes. Let it do it’s thanggg.

  7. Once cooked, hit ‘Cancel’, ‘Keep Warm’ and set the time to 10 minutes. This is the quick release method.

  8. Finally once that is done, use a towel to carefully turn the steam valve to ‘Venting’. Wait a few seconds for the metal piece next to it to drop back down. Now it is safe to open!

  9. Add in your leafy greens and stir for them to wilt. Then add in 1/2 your cooked pasta. Gently stir everything together.

  10. Serve in a bowl topped with fresh cilantro!

Notes & Tips:

  • The sauce will make enough for half the pasta. Save the rest of another recipe or only cook half the box!

  • I definitely take advantage of the quick release method to be able to eat my food faster lol. Essentially, you're letting your food cook for another 10 minutes.

  • Always make sure your steam knob is turned to the correct side and use a towel or spatula to turn it after cooking. Be sure to only open the lid once the metal plate next to it has dropped down.
