Eggplant Falafel Gyros

Who loves a deliciously loaded gyro?! So easy to make & the eggplant brings a healthier twist to traditional falafel. Also, anyone else having a sluggish Monday? Don’t get me wrong, I LOVE Daylight Savings time! To have it be sunny past 7 pm is amazing. Just struggled waking up at 6 am this morning though.

 

Eggplant Falafel Gyros

🔪 Prep Time: 25 minutes

🍳Cook Time: 10 minutes

🕒Total Time: 40 minutes

🍴Serving Size: 3-4


Ingredients:

  • Whole Wheat Pita Bread

  • ️Tzatziki Sauce {deets below}

  • Hummus {deets below}

  • Eggplant Falafels {deets below}

  • Radish, sliced

  • Cherry Tomatoes, halved

  • Onion, sliced

  • Fresh Cilantro

Tzatziki Sauce:

Hummus:

  • 1 can Chickpeas

  • Lemon Zest

  • 1/2 Lemon, juiced

  • 1 tbsp Sesame Oil (@kikkomanusa)

  • 2 tbsp Water

  • Salt & Pepper

Eggplant Falafels:

  • 1 medium Eggplant, sliced

  • Rice Breadcrumbs (@traderjoes)

  • 1/2 cup Whole Wheat Flour (@bobsredmill)

  • 1 tbsp Cumin & Chili Powder

  • 1/2 cup + 2 tbsp Water

  • Salt & Pepper

Instructions:

  1. Tzatziki Sauce: Grate the cucumber, sprinkle salt and set aside to drain excess water for roughly 15 minutes. In a food processor, add in all the remaining ingredients. Pulse to mix together. Add the cucumber back in and use a spoon to mix. Set aside in a bowl.

  2. Hummus: Pulse together all ingredients in a food processor. Add in the oil and water while pulsing. Set aside in a bowl.

  3. Eggplant Falafels: Slice the eggplant, sprinkle salt on both sides and set aside on some paper towels drain excess water for roughly 15 minutes. In a bowl, mix together flour, cumin, chili powder and water - this makes the batter. In a plate, lay out the breadcrumbs. One by one, dip the slices in the batter, then coat each side evenly in breadcrumbs. Place into the air fryer (don’t overlap the slices). Cook at 400° for 10 minutes.

  4. Build up your gyro wraps! Spread a layer of hummus, top with your eggplant falafels, and then drizzle with tzatziki sauce. Top with halved tomatoes, sliced radish, onions and fresh cilantro.

Notes & Tips:

  • To reheat eggplant falafels, just air fry again at 400° for 5 minutes.

  • You can add all of your ingredients inside the pita pocket for a less messy wrap!
