Vegan Nutritional Yeast Garlic Pasta

Ingredients:
Breadcrumbs -
1/2 tbsp Vegan Butter (@earthbalance)
2 tbsp Rice Crumbs (@traderjoeslist)
Italian Seasoning & Pinch of Garlic Powder
Sauce -
1/2 tbsp Vegan Butter
1/4 Red Onion, cubed
2 cloves Garlic, minced
1/2 tbsp Almond Flour (@bobsredmill)
Spices- Cumin, Smoked Paprika, Salt & Pepper
1/2 cup Unsweetened Almond Milk (@califiafarms)
1/4 cup Nutritional Yeast (@bragglivefoodproducts)
1/4 cup Vegetable Broth (@traderjoeslist)
As well as -
1/2 box Chickpea Pasta (@eatbanza)
️1/2 Vegan Sausage (@traderjoeslist)
️Spinach Arugula Mix
Instructions:
Breadcrumbs - Add your butter to a pan on medium heat. Once melted, add in the remaining ingredients. Frequently mix until brown & toasty. Set aside.
Meanwhile, boil your pasta according to package instructions.
Slice your sausage & cook evenly on both sides in a small pan.
Sauce - Add your butter to your pan along with the onion & garlic. Sauté for 3-4 mins. Then add in your flour & spices. Mix again for 1-2 mins. Finally, add in your milk, nutritional yeast & broth. Add more or less broth based on desired consistency.
Then add in your cooked pasta & evenly coat in the sauce. Add in your spinach & arugula & mix until it whilst in the sauce. Finally, add in your vegan sausage.
Serve in a plate topped with red crushed pepper & your toasted breadcrumbs!
Notes & Tips:
I love to see Rice Crumbs instead of Panko for a healthier, gluten-free option.
Best eaten fresh as the sauce will start to dry up. If it does, just add in another splash of broth or water to make creamy again.
