Vegan Cauliflower Alfredo Pasta

Never get tired of this super delicious & healthy pasta sauce recipe šŸ˜‹ It's so easy to make & both vegan & gluten free! šŸ™ŒšŸ½ If you're into that sort of thing...šŸ¤·šŸ½ā€ā™€ļø Tried a different method this time for my pasta bc I am obsessed with my new @ourplace pan & wanted to use it for everything šŸ˜… So instead of roasting my veggies, I steamed them šŸ’¦ Actually prefer this bc it soften my cauliflower but didn't burn them šŸ”„, so I had a nice creamy white sauce šŸ¤—ā

Vegan Cauliflower Alfredo Pasta

šŸ”Ŗ Prep Time: 10 minutes

šŸ³Cook Time: 20 minutes

šŸ•’Total Time: 45 minutes

šŸ“Serving Size: 3-4


Ingredients:

  • 1 box Gluten Free Brown Rice Spaghetti (@jovialfoods)ā 

  • 1/2 head (2 cups) Cauliflower

  • 1/4 Onion, roughly sliced

  • 2-3 cloves Garlic, minced

  • 3/4 cup Unsweetened Almond Milk (@califiafarms)ā 

  • 1/4 cup Vegetable Broth (@traderjoes)ā 

  • 3/4 cup Vegan Parmesan (@followyourheart)ā 

  • Half head of Broccoli

  • 2 Handfuls of Greens (spinach, kale, arugala, etc.)ā 

  • 2-3 Handfuls of Cherry Tomatoes, halved

  • Spices - Salt & Pepper, Nutmeg & Italian Seasoning

Instructions:

  1. Steam your cauliflower for roughly 10-12 minutes. My pan came with a steaming rack but you can find an inexpensive one online that fits most pots. Add a little water underneath and cover to steam. It should be fork tender.ā 

  2. If you have space, you can steam the broccoli as well for 6-8 minutes. Or like I did, waited until the cauliflower was done and then steamed the broccoli.ā 

  3. Meanwhile, cook the spaghetti according to directions. Drain, rinse, and set aside.ā 

  4. Once your veggies have steamed, add your onion and garlic to the pan with some olive oil. Add in some salt and pepper. Saute for a good 6-8 minutes, until caramelized.ā 

  5. Then add in the milk, broth, cauliflower, cheese, and spices. Let the cheese fully melt and mix in.ā 

  6. Transfer to a counter-top blender and blend until creamy (or keep in pan/pot and use an immersion blender).ā 

  7. Add your spaghetti and steam broccoli to the pan. Then pour in your creamy pasta sauce.ā 

  8. Finally, add in some greens and let it wilt in the hot sauce.ā 

  9. Serve pasta in a bowl with fresh sweet tomatoes and some red crushed pepper!ā 

Notes & Tips:

  • Store in an air-tight container for up to a week. The leftovers make for a great work lunch!

  • To heat up leftovers, splash pasta with some water and then microwave for 1.5-2 minutes.

  • For roasting method - Preheat toaster oven to 400Ā° (regular oven 425Ā°).ā  ļøIn a baking dish, add in the cauliflower, onion and garlic. All can be loosely chopped.ā  ļøTop with olive oil, salt & pepper. Roast in the oven for roughly 15-20 minutes to soften.ā  Then add in to your pan with the milk, broth, cheese, and spices.
