Tomato Avocado Bruschetta


I made this delicious bruschetta the other day & paired it with my Basil Pesto Zoodles. It’s crispy, fresh & makes a wonderful side to some zoodles!

 

Tomato Avocado Bruschetta

🔪 Prep Time: 5 minutes

🍳Cook Time: 5 minutes

🕒Total Time: 15 minutes

🍴Serving Size: 2


Ingredients:

  • 6 slices French Bread

  • 3-4 cloves Garlic, minced

  • 1 Roma Tomato, cubed

  • 1/2 large Avocado, cubed

  • Less than 1/4 Onion, diced

  • 1/4 cup Cilantro

  • 1 Lime, juiced

Instructions:

  1. Preheat oven to 350°.

  2. Slice the french bread & brush on olive oil.

  3. Sprinkle a little of the chopped garlic on each slice and set aside the rest.

  4. Bake the slices for about 5 mins (or until brown).

  5. In a bowl, mix remaining chopped garlic, tomato, avocado, onion and cilantro.

  6. Drizzle in some lime juice and season with salt and pepper.

  7. Take the bread out of the oven when ready and top evenly with the tomato mixture.

  8. Garnish with fresh cilantro and sesame seeds.

Notes & Tips:

Make sure to remove any excess water and seeds from the tomatoes so that the bread doesn't get soggy.
