Tahini Chocolate Chip S'mores Cookies
🔪 Prep Time: 10 minutes
🍳Cook Time: 10 minutes
🕒Total Time: 20 minutes
🍴Serving Size: Makes 10-12 Cookies
Ingredients:
3/4 cup Almond Flour (@natureseats)
1/4 cup Coconut Flour (@bobsredmill)
1 cup Tahini (@traderjoes)
1/2 cup Maple Syrup (@coombsmaple)
3 GF Graham Crackers (@pamelasproducts)
Chocolate Chips (@enjoylifefoods)
Vegan Marshmallows (@traderjoes)
1 Pasture Raised Egg (@vitalfarms) (vegan sub - 1 tbsp flax seeds mixed with 2 tbsp water)
1 tsp Baking Soda
Instructions:
Sift through your flours into a mixing bowl.
Then add in your tahini & maple syrup.
Use a food processor to crush up your graham crackers. You want it pretty broke up but not completely fine. Add all of it, leaving just a smidge behind to sprinkle your cookies with before baking.
Add in lots of chocolate chips and marshmallows. You measure this by heart ❤️
Mix dough evenly and then refrigerate for 30 mins.
Then, add in your egg and baking soda. Mix everything evenly.
Use a cookie scooper to add your dough to a baking sheet. Should make about 10-12 cookies. Flatter down a little and sprinkle on your leftover graham crackers.
Bake at 350* for 10-12 mins.
I would say let it cool before eating but we all know that's not going to happen 🤷🏽♀️
Notes & Tips:
Store in an airtight container in the fridge for up to a week (they won't be there for that long, no worries).
