Spicy Sweet Potato Burgers
Currently sick so I have not been in the mood to cook...can barely stand! So for dinner today, I decided to whip out these patties I made few weeks back from the freezer. Literally took 5 mins to put together and now my sick self is pretty happy. These patties are also VEGAN and can be easily be altered for gluten free, paleo, or keto.
Spicy Sweet Potato Burgers

🍳Cook Time: 1 hour and 30 minutes
🕒Total Time: 1 hour and 45 minutes
🍴Serving Size: Makes 5 Patties
Ingredients:
1 medium Sweet Potato
️1/2 cup Tricolor Quinoa
1/4 cup Green Lentils
1/2 Jalapeño, finely chopped
1 tbsp Whole Wheat Flour (@bobsredmill)
1 tbsp Olive Oil
️2 tsp Crushed Red Pepper
1 tsp Chili Powder
1/2 tsp Garlic Powder
1/2 tsp Smoked Paprika
️Salt and Pepper
1/2 Cup Panko Breadcrumbs
Instructions:
Preheat the oven to 425°.
Then, wash the sweet potato and poke with a knife. Line a baking sheet with foil and roast in the oven for roughly 45 minutes.
Meanwhile, cook the quinoa and lentils in 1 1/2 cups of water.
Once those two things are cooked, in a bowl, mash together the potato and quinoa. Add in the following ingredients - jalapeños, flour, olive oil, and spices. At the end, mix in the breadcrumbs.
Using a 1/2 measuring cup, scoop out the mixture and place on a baking dish with a slightly greased parchment paper. Shape into 5 patties.
Bake at 350° for roughly 40 minutes, flipping halfway.
Store them in the fridge or freezer and heat up in a pan right before eating!
Notes & Tips:
Not only can you add these delicious patties to a wrap, but you can slice 'em up and add to a salad wrap!
