Southwestern Hash Breakfast Plate
Breakfast for dinner anyone? Sometimes it's hard making a fancy breakfast when you have to be at work by 7:30 am! So I decided to make this yummy sweet potato & black bean southwestern hash for dinner tonight. With some Avocado Dressing to celebrate #NationalAvocadoDay!
Southwestern Hash Breakfast Plate

🍳Cook Time: 10 minutes
🕒Total Time: 20 minutes
🍴Serving Size: 2
Ingredients:
2 Sweet Potatoes, cubed
1/2 Onion, diced
1/2 Green Bell Pepper, diced
1 Zucchini, cubed
15 oz Refried Black Beans
Handful of Spinach
2 Brown Eggs
Avocado Dressing (recipe here)
Spices - Cumin, Chili Powder, Salt and Pepper
Instructions:
Wash and prep all of your veggies. Cook in avocado oil for roughly 5 minutes.
Season with all of your spices.
Add in your spinach and cook for another 5 minutes.
Cook your eggs sunny-side up and heat up your black beans in a small pot.
Serve the sweet potatoes with eggs, refried black beans, avocado sauce and @tapatiohotsauce.
Add more sliced avocado because you can never have too much!
Garnished with fresh cilantro, hemp and sesame seeds.
Notes & Tips:
If you like your sweet potatoes softer, before cubing, pole holes with a fork and heat in the microwave for a minute.
