Peanut Thai Noodles


This dish has got all the Thai feels & I am absolutely NUTS for it! The sauce is so creamy & blends all the flavors wonderfully. Great way to start off the week!

 

Peanut Thai Noodles

🔪 Prep Time: 10 minutes

🍳Cook Time: 15 minutes

🕒Total Time: 30 minutes

🍴Serving Size: 4


Ingredients:

  • 1/3 cup Peanut Butter (@justins)

  • 3 tbsp Soy Sauce (@kikkomanusa)

  • 3 tbsp Sesame Oil (@kikkomanusa)

  • 4 tbsp Water

  • 2 tsp Honey

  • 1 clove Garlic, minced

  • 1/2 tbsp Ginger, finely chopped

  • 8 oz Wheat Spaghetti

  • 1/2 cup Carrot, shredded

  • 1/2 cup Cabbage, shredded

  • 3/4 cup Edamame

Instructions:

  1. Prep all of your veggies accordingly.

  2. Combine peanut butter, soy sauce, sesame oil, water, honey, garlic and ginger in a blender. Blend until creamy.

  3. Combine cooked spaghetti, carrots, cabbage and edamame in large bowl.

  4. Pour peanut sauce and mix in evenly.

  5. Serve and top with sesame seeds, chopped scallion & peanuts.

Notes & Tips:

Best served fresh! The peanut sauce doesn't keep too well in the fridge.
