Paleo Sweet Potato Banana Bread
Probably the BEST banana bread I have made by far. Paleo, dairy free, grain free (thanks to @natureseats almond flour #ad), AND - NO ADDED SUGAR! Only sweetness comes from the bananas and sweet potatoes. Well, except for the chocolate chips, but what kind of banana bread doesn’t have chocolate chips? They’re a MUST! But I’m not kidding, you have to check out this recipe!
Paleo Sweet Potato Banana Bread
🔪 Prep Time: 15 minutes
🍳Cook Time: 40 minutes
🕒Total Time: 60 minutes
🍴Serving Size: 8 Mini Loaves or 1 Regular Loaf
Ingredients:
Wet Ingredients:
3 Ripe Bananas
1/2 cup Sweet Potato, roasted
1/3 cup Almond Butter
2 tbsp Coconut Oil
2 tbsp Unsweetened Almond Milk (@califiafarms)
1 Pasture Raised Egg (@vitalfarms) (vegan sub - 1 tbsp flax seeds mixed with 2 tbsp water)
1 tsp Vanilla Extract
Dry Ingredients:
1 cup Almond Flour (@natureseats)
1 tsp Baking Soda
1 tsp Baking Powder
2 tsp Cinnamon
Dash of Nutmeg
Pinch of Salt
As well as:
Chocolate Chips (@lilys_sweets)
Chopped Walnuts (@natureseats)
Instructions:
Start off by roasting your sweet potatoes. I roasted 1 large potato at 400° for 40 mins in my @ninjakitchen toaster oven. I cut them in half & placed them face down on aluminum paper.
Once roasted, scoop out the flesh, removing any hard skin and measure out enough for 1/2 cup (save any extra for a later recipe).
In a mixing bowl, add in all of your wet ingredients and use a hand mixer (or wooden spoon) to blend together.
Then, sift in your dry ingredients. Evenly mix with a wooden spoon. Be careful not to over mix it.
Add in some chocolate chips and chopped walnuts.
Preheat your oven to 350°.
Evenly pour out your batter into your mini loaf pan (recipe still works for a large bread pan!) Use a spoon to spread evenly and top with some cacao nibs (@navitasorganics), almond slices, and toasted coconut.
Cook in the oven for roughly 40 minutes.
Notes & Tips:
Be sure to not over-mix your batter! That will give you a denser bread which we don't want...we want light and fluffy!
Store in an airtight container for up to a week!
