Healthy Thanksgiving Cornbread
Here's another easy & healthy Thanksgiving/Friendsgiving recipe 😋 This fluffy cornbread is the PERFECT side dish for dinner 🤩 Texture is on point as well as the flavor 👌🏼 Never been a huge fan of cornbread 🙊 But I gotta say, I could eat this everyday! It tastes the BEST slightly warmed with some @earthbalance vegan butter already on top 🤤
Healthy Thanksgiving Cornbread

Ingredients:
Dry Ingredients -
1 1/4 cup Ground Corn Meal (@wholefoods)
1/2 cup Whole Wheat Flour (@bobsredmill)
1/2 tsp Baking Soda
1 1/2 tsp Baking Powder
Pinch of Salt
Wet Ingredients -
1 tbsp Butter, melted (@earthbalance)
1 tsp Vanilla Extract (@traderjoeslist)
1 Organic Brown Egg (@vitalfarms)
1/2 cup Plain Skyr Yogurt (@siggisdairy)
2 tbsp Raw Honey
1/4 cup Unsweetened Almond Milk (@califiafarms)
Instructions:
Preheat oven time 350°.
Start off by sifting all of your dry ingredients into a mixing bowl. Mix evenly together.
In a large mixing bowl, add in your oil, vanilla & egg. Whisk well together. Then mix in your yogurt & honey.
Then, slowly add in 1/3 of your mixed dry ingredients & incorporate together. Add in half of your milk. Whisk together. Add in another third of your flour mixture, whisk, & then the remaining milk & whisk. Lastly, whisk in the remaining flour until no lumps are left.
Transfer batter to an 8”x8” parchment lined baking sheet. Spread evenly to all edges. Bake for 18 mins.
Once it’s done baking, let it cool for 15-20 mins before cutting into 2” squares. Add some butter & enjoy!🙌🏼
Notes & Tips:
Tastes the BEST slightly warmed with some @earthbalance vegan butter already on top
Keeps best in the fridge for up to 5 days.
