Cauliflower Fried Rice


This cauliflower fried rice is my go-to and I probably make it at least 2-3 times a month. Super easy and so so healthy! And it’s definitely a plus that it makes a lot so I have plenty of leftovers to take to work!

 

Cauliflower Fried Rice

🔪 Prep Time: 10 minutes

🍳Cook Time: 25 minutes

🕒Total Time: 40 minutes

🍴Serving Size: 4


Ingredients:

  • 12 oz Cauliflower Rice (@greengiant)

  • 8 oz Firm Tofu (any I find at the store)

  • 4 Brown Eggs

  • 1 Colorful Bell Pepper, cubed

  • Frozen Edamame

  • Frozen Sweet Corn

  • 1/4 Sweet Onion, diced

  • 1/2 Broccoli

  • Handful of Shredder Carrots

  • Sriracha, to taste (I use a bunch 😅)

  • Spices - Cumin, Garlic Powder, Ginger Powder, Chili Powder, Salt and Pepper

Instructions:

  1. Chop bell peppers & onion and cut broccoli florets from stems. Add bell peppers, onion, broccoli, carrots, edamame & corn to pan. Sauté all veggies in olive oil for few minutes (~10 minutes) until soft. Set aside in another dish.

  2. Steam cauliflower rice according to package instructions. Pour into pan from earlier & keep on medium heat.

  3. Push rice to the sides of the pan, leaving a hole and pour in eggs. Mix eggs into the rice & cook for a few minutes (~5 minutes). Set aside in another dish.

  4. Wrap tofu in paper towels, press between 2 plates and microwave for 2 minutes. Cut into cubes of desired size.

  5. In the same pan, heat sesame and olive oil, then add in the cubed tofu. Sprinkle in your spices. Cook until brown and crispy (~10 minutes), flipping as needed.

  6. Serve veggies, fried rice, and tofu in a bowl. Garnish with sesame and hemp seeds and lottsaaa #sriracha!
