Chocolate Coffee Popsicles
Decided to make use of the extra nice cream I had sitting in the fridge and turn them into popsicles! A few posts ago, I had shared my Chocolate Coffee Nice Cream Recipe and I used the leftovers to turn them in to popsicles! So fun eating them this way and I even dipped them in some chocolate.
Chocolate Coffee Popsicles
🔪 Prep Time: 10 minutes
🕒Total Time: Overnight freeze
🍴Serving Size: 4-6
Ingredients:
3/4 cup Cashews
4 Medjool Dates, pitted
1 1/2 cup Coconut Water (@vitacoco)
1 1/2 cup Cold Brew
3 Bananas
1 tbsp Cacao Powder (@guittardchocolate)
2 tbsp Almond Butter (@justins)
1 tsp Vanilla Extract
Chocolate Dip:
2 tbsp Coconut Oil
2 tbsp Cacao Powder
Instructions:
Chop the cashews and dates in a food processor until finely chopped.
In a high speed blender, add in the cashew date mixture as well as the remaining ingredients.
Pour into popsicle molds and place in the freezer for at least a few hours before eating.
When you’re ready to eat, run the molds under some cold water to loosen the popsicles. In a glass, mix your two ingredients.
Dip the popsicles in the melted chocolate and sprinkle with crushed cashews. The chocolate hardens immediately!
Notes & Tips:
Overnight freeze is usually the best!
