Paleo Sweet Potato Waffles
It has been MONTHS since I have made these sweet potato waffles! Forgot how good they were and naturally sweet. Reworked my recipe and made a few changes to help with consistency. Hope you guys like it! Also Happy @amazon #PrimeDay! Will you be shopping??
Paleo Sweet Potato Waffles

Ingredients:
Wet Ingredients-
1/3 cup Sweet Potato, baked
2 tbsp Coconut Oil (@vitacoco)
2 Pasture-Raised Eggs (@vitalfarms)
1/4 cup Unsweetened Almond Milk (@silk)
1/4 cup Almond Butter (@wholefoods)
1 tsp Vanilla Extract
Dry Ingredients-
1/4 cup Coconut Flour (@bobsredmill)
1/4 cup Almond Flour (@natureseats)
1 scoop Unflavored Protein Powder (@nuzest_usa)
1/2 tbsp Baking Powder
1 tsp Baking Soda
Pinch of Salt
1/2 tsp Cinnamon
Instructions:
Roast your sweet potato in the oven for 45 mins at 425°. Carefully scoop out flesh from the skin to add to your wet ingredients.
Add all the wet ingredients in your blender (@ninjakitchen) and blend on high.
In a mixing bowl, sift in all the dry ingredients and mix evenly. Then pour in your wet ingredients. Fold everything together. Make sure there aren’t any lumps.
Heat up your waffle iron (I used my @osterkitchen iron and I didn’t need to spray it down). Scoop out the mixture and cook it on medium-high for crispy waffles.
Top waffles with plain Greek yogurt (@siggisdairy - use a dairy free option to be paleo), strawberries, blueberries, raspberries, Monkfruit Maple Syrup (@lakantosweetener), walnuts, and hemp seeds (@manitobaharvest)
Notes & Tips:
Keep in mind that 1/3 of these waffles consists of sweet potato so the texture won't be the same as regular flour waffles. The taste however, is much better!
