🍴Serving Size: 8-10 Mini Waffles
Ingredients:
1 large Brown Egg
1/2 cup Plain Greek Yogurt (@siggisdairy)
1/2 cup Unsweetened Almond Milk (@silk)
2 tbsp Coconut Oil
2 tbsp Maple Syrup (plus more for serving️)
2/3 cup Whole Wheat Flour
️3/4 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tbsp Cacao Powder (@guittardchocolate)
Instructions:
In a mixing bowl, add in all the wet ingredients first - egg, yogurt, milk, oil, and syrup. Mix evenly.
Then add in the dry ingredients - flour, baking powder, and baking soda. Mix evenly.
Then pour out about half the batter into a second bowl. Add in the Cacao powder and mix.
Turn on the waffle iron and spray the top and bottom with olive oil. Pour both batters at the same time onto the waffle iron, swirling them around. Cook according to your waffle iron.
I topped my waffles with some almond butter, berries, maple syrup, and powdered sugar.
Notes & Tips:
Cook for a minute or two longer to get a crispier waffle! Be sure to not over-fill the iron.
