Banana Waffles with Strawberry Syrup

Everyday this week so far, I’ve been trying to cook up all the food that’s close to going bad in my fridge. Had some poor bruised bananas that I thought about freezing for smoothies but then waffles sounded so much better. So here’s a simple, healthy, little messy, banana waffles recipe to celebrate #WaffleWednesday! (Plus it’s so much fun using my mini waffle maker by @unprocessyourfood)

Banana Waffles with Strawberry Syrup

🔪 Prep Time: 10 minutes

🍳Cook Time: 10 minutes

🕒Total Time: 15 minutes

🍴Serving Size: 14-15 Bites


Ingredients:

  • 2 ripe Bananas

  • 2 Cage Free Brown Eggs

  • 1 tsp Cinnamon

  • 1 tsp Vanilla Extract

  • 1 1/2 tbsp Almond Flour (@bobsredmill)

  • 1/2 tsp Baking Powder

  • 1/4 tsp Baking Soda

Strawberry Syrup -

  • 4-5 Strawberries, cubed

  • 1/2 cup Water

  • 2 tbsp Stevia

  • 1/2 tbsp Cornstarch

Instructions:

  1. For the waffles, blend all the ingredients in a food processor or blender. Pour into a waffle maker and cook accordingly.

  2. For the syrup, add everything to a pot and bring to a medium boil. Stir frequently until it forms into a thick syrup.

  3. Start to stack the waffles. Every 2 waffles, I added some maple syrup, almond butter (@justins), plain Greek yogurt (@siggisdairy), and the strawberry syrup. Continue until you reach the top! Added some frozen blueberries as well.

Notes & Tips:

Best eaten fresh! Cook them in your waffle maker a bit longer than instructed so it can crisp up.
